Browned Cafe is a fast-growing halal café concept in London, Ontario, founded by Ahmed Badra — specialty coffee, baked goods, signature sandwiches, and two locations already open. As franchising conversations got serious, the business needed to evolve from founder-led operations into a documented, replicable system. The fundamentals were strong, but systems ran on intuition: inconsistent recipe structure, gaps in food-safety documentation, informal know-how never captured as SOPs, no franchise documentation framework, and marketing that had drifted out of sync with operations.
We partnered with Ahmed across three phases to move Browned from founder-led to franchise-ready, then stayed on as ongoing advisors and marketing partners.
- 01Phase 1 — Discovery & Audit: on-site operational audit of both locations covering product consistency, food-safety practices, kitchen and bar workflow, and documentation gaps, plus a full founder discovery session.
- 02Phase 2 — Systems & Documentation: authored the Master Operations Manual (the 'Franchise Bible'), recipe and station cheat sheets, prep guides, station layout diagrams, a health and safety plan with temperature logs and cleaning schedules, and a manager's daily playbook.
- 03Phase 3 — Franchise & Growth: franchise framework support, technology and POS roadmap, supply-chain and vendor playbook, franchisee onboarding journey, and ongoing weekly advisory acting as their external HQ.
- 04P&L and POS financial analysis confirming 20%+ profit margin uplift potential across the model.
